Spinach salad that is fresh and wild for hot and cold summer nights. This meal salad is easy and quick to prepare. Perfect when you’d rather be sitting with your butt on a picnic blanket 10 minutes ago, but still want to bring something tasty. Don’t forget to bring a dry white wine. So how long does it take? Within 10-15 minutes (depending on how fast your oven heats up), the wild spinach salad is ready.
Ingredients for 2 people wild spinach salad with toasted walnuts
Salad:
- 200 grams of wild spinach, washed
- 100 grams of organic vegan cheese (vegan from Vegetus, for example)
- Handful of seedless white grapes
- Yellow bell bell pepper
- Shallot
- 50 grams of walnuts
- 1 ripe avocado
Dressing:
- 2 tsp apple cider
- 3 tbsp olive oil extra verge
- 1 tsp spicy mustard with seeds
- 1/2 tbsp (organic) agave syrup
Preparation of wild spinach salad
Step 1:
Preheat the oven to 180 degrees. When the oven is hot, put the walnuts on a plate and slide them into the oven. Leave them in the oven for about 5 minutes. Check occasionally to make sure they are not going too fast. Depending on the oven. If they are not yet hot & crispy then leave them in the oven for a while longer.Step 2:
Remove the stems from the wild spinach. Tear the leaves a little so you don’t have large leaves. Put them in a salad bowl.

Wash the grapes and add them to the salad.

For the dressing, put all the ingredients together and mix well. Is the dressing too thick? Then add a little olive oil. Next, pour the dressing over the salad. Stir a little and then add the crumbled vegan blue cheese on top. Possibly some extra noble yeast flakes.
Step 7:
Cut the avocado into long strips.
