Vegan fried rice with vegetables

How about a vegan Thai fried rice with vegetables We all know the vegetarian nasi goreng variety, but this vegan version with Thai twist and lots of vegetables is really delicious! This recipe is especially great when you have a full schedule, little time and don’t really feel like cooking. It’s best to use rice that you had left over, because then you’ll be ready in a blink of an eye! If you want to make the nasi goreng, fry up the rice. After all, nasi means rice in Indonesian. And fried goreng. For this vegan fried rice with vegetables, I used what I had in my fridge. A tasty addition is also paprika and peas.

Ingredients for 2 people vegan fried rice with vegetables

  • 200 grams of rice
  • 5 mushrooms
  • 1 bell bell pepper
  • 1 onion
  • 3 or 4 cloves of garlic
  • 1 cm fresh ginger
  • 1 red pepper
  • 1 scallion
  • Handful of cilantro
  • 1 teaspoon cumin seeds
  • 1 teaspoon of coriander seeds (ketoembar)
  • Handful of cashews
  • Salt
  • Pepper
  • Ketjap asin
  • Mushroom vegetarian sauce

How do you make the vegan fried rice with vegetables?

  1. Cook the rice, or better: use rice from the previous day.
  2. Meanwhile, slice mushrooms, bell pepper into pieces and spring onion into rings
  3. Also shred onion, pepper, ginger, cilantro
  4. Warm up a wok and put some oil in it
  5. Sauté onion, add garlic, ginger and pepper
  6. Add mushrooms, bell bell pepper and spring onion
  7. Keep stirring everything up nicely
  8. Then add some cumin seed powder and ketoembar, and salt and pepper
  9. Add the cooked rice to the pan
  10. Then pour in a generous splash of soy sauce asin and mushroom vegetarian sauce
  11. Stir well so you no longer see a white grain of rice
  12. Sprinkle in some chopped cilantro and some cashews
