When I was still eating meat and cheese, I loved sandwiches. Dipping your sandwich in some ketchup, delicious! When I became a vegetarian, I still occasionally ate a cheese toasti, but when I decided to stop eating cheese as well, the concept of a sandwich ended up in oblivion. But wait, you can also eat super delicious plant-based sandwiches. And they are super simple to make. Check out this cheesy avocado toasti without ham and cheese! Just dip in some ketchup and enjoy! If you still prefer the substance of cheese, then of course you can buy plant-based cheese. I find Lidl’s vegetable slices really more than fine for this purpose. Especially since you combine it with noble yeast flakes! Keeps it somewhat affordable too ;-).
Fun fact: Did you know that in Barcelona (and surrounding areas) they call the sandwich a a bikini? This is originally from the 1950s. There was a very popular club called ‘Bikini’ . They served “sandwiches with ham and cheese, this was so popular that people ended up asking for the “bikini” outside the club.
Ingredients cheesy avocado sandwich
for 1 person
- 2 sandwiches
- Pesto without cheese
- 1 sliced avocado (small or half-size)
- 7 spinach leaves
- 1 shallot, chopped
- Salt and pepper
- 1 tbsp. noble yeast flakes
- Optional: vegan cheese slices
Preparation
- Spread some pesto on both slices of bread
- Optional: put a slice of vegetable cheese on one sandwich
- Cover with the cheese (or if you don’t use vegan cheese then put the spinach leaves on one sandwich) with the spinach leaves
- Then top that with slices of avocado
- Then sprinkle some shallots on top
- Then put some salt and pepper on top
- Finally, sprinkle with some noble yeast flakes
- Cover with the other slice of bread, pesto side down
- Place in your toaster iron until your sandwich has a nice brown coating
- Delicious with some ketchup.
