Rogan josh curry with a vegan twist

The traditional Rogan Josh curry is with meat, lamb that is. Since I’ve really only been eating vegan, or plant-based, for the past few months, I was eager to make this curry plant-based as well. Nice challenge. After quite a bit of trial and error, this variation turned out well. The taste of this Rogan Josh is slightly sweet but tangy. Usually I don’t really like a sweet taste in hot food, but the cinnamon doesn’t have the standard sweet taste (sugar). I would say, try it for yourself!

Ingredients for 2/3 persons
Rogan Josh curry with a vegan twist

  • 250 chestnut mushrooms
  • 1 large carrot
  • 400 grams of tomatoes
  • 1 large onion
  • 5 cloves of garlic
  • 10 cardamom pods
  • ½ teaspoon tamarind
  • ½ teaspoon cinnamon
  • ½ teaspoon ground coriander
  • 1 teaspoon ginger (fresh)
  • 2 dried chilis
  • 100 ml of water
  • 150 ml of cooking milk
  • Fresh coriander

For the rice

  • 200 grams of basmati rice
  • 4 cardamom pods

 

Preparing Rogan Josh curry with a vegan twist

  1. Chop the onions and garlic. Fry it together in a thick-bottomed pan. A wok can also be used if necessary.
  2. Prepare the rice according to the package and cook 4 cardamom pods with it. That gives a nice flavor.
  3. Slice the tomatoes, peel the carrot and chop.
  4. Clean and slice the mushrooms. Peel off the skin of the ginger and chop into pieces.
  5. Warm the pan with a little coconut oil.
  6. Fry the onion and garlic. Add tamarind, 10 cardamom pods, cinnamon, dried chilis (in pieces) ground coriander and the ginger.
  7. Tip: Sliced chilis? Watch out for rubbing your eyes afterward…don’t want sore eyes? Then put little lemon juice on your hands)
  8. Mix the spices well and cook with them for 2 minutes.
  9. Then add the mushrooms and carrot. Stir frequently until the mushrooms have shrunk slightly.
  10. Then add the tomatoes and the water and coconut milk. Then let it simmer for 5-10 minutes on low heat.
  11. Scoop up the rice, add the curry. Also delicious with a chapati or naan.
