Oriental tofu soup with cabbage

A soup that is easy to digest yet nutritious? That’s this tofu soup. There are few ingredients in this soup, but for that very reason it is so delicious. Simple and also flavorful. You can find all the ingredients for tofu soup just at your supermarket. Convenient, quick and easy!

What do you need?

Ingredients tofu soup for 4 people

  • 200 grams of tofu
  • 125 grams of Chinese cabbage
  • 1.5 spring onion or leek
  • 1 garlic clove
  • 100 grams of mushrooms
  • 8 dl vegetable broth
  • 1 tsp sesame oil
  • handful of bean sprouts
  • fried onions for the enthusiast

Preparation of tofu soup

  1. Cut the Chinese cabbage into strips and then into about 1.5 cm pieces. Take the garlic and spring onion and chop finely.
  2. Clean the (chestnut) mushrooms, remove the bottom of the stalks and slice them.
  3. Squeeze out a little of the moisture from the tofu (if you buy pre-packaged from the supermarket). Then cut the tofu into slices and then into cubes of about 1.5 cm.
  4. Get your wok, put oil in it and let it get hot. Spoon the spring onion and garlic into the wok and stir-fry until fragrant.
  5. Now add the mushrooms. Keep stir-frying until the liquid comes out. Make sure the mushrooms don’t burn! If necessary, turn down the heat a little. Now add the broth and bring to a boil.
  6. When the broth boils, add the Chinese cabbage and tofu. Turn down the heat a little. Season to taste with salt and pepper. Also add 1 teaspoon of sesame oil. Let warm for a moment. When the tofu is hot (yes, you can taste for a moment ;-)), the soup is ready. Divide the soup among bowls. For a nice garnish, sprinkle some spring onion and fried onions on top!
