Mexican Chili Sin Carne

A super easy chile sin carne recipe for anyone who likes to eat a full and spicy dish. I used to eat this dish too, but with meat, of course. Since my transition to a plant-based diet, I have been making this recipe regularly. It really is a delicious dish and perfect for big eaters or when you don’t have that much time to cook during the week. Make this chili sin carne on the weekend and it will be even tastier the day after because the flavors will be even more absorbed in the lentils and beans.

Of Origine, chile sin carne is a Mexican meat dish. Only it originated in what is now south Texas and northern Mexico, so-called Tex-Mex cuisine. Chili peppers came from Mexico. There they have been used for many years – say, for about 6,000 years. There is still ambiguity among connoisseurs as to whether the beans belong in this one-pot dish, probably not at the dish’s inception, but by now we can’t think away the beans. This chili sin carne is completely vegan and meat substitute-free. If you do like to use a meat substitute, fry up some vegan minced meat from my favorite Vivera (no, not sponsored).

Which, by the way, is another tasty addition: avocado. With bit of avocado, you pick up your chili a tad in freshness.

This dish is also perfect for when you have little to no fresh vegetables in the house. All you really need fresh is bell bell pepper and cilantro. So a good recipe during a coronavirus quarantine.

Chili Sin Carne

Preparation 10 minutes
Cooking time 1 hour
Number of persons 4 persons

Ingredients

  • 1 tbsp oil
  • 1 onion onion cut into small pieces
  • 400 gr chopped tomatoes (canned)
  • 2 cloves garlic
  • 300 ml white wine
  • 300 ml vegetable broth
  • 115 gr red (or yellow) lentils
  • 2 fresh thyme sprigs (or 1 tsp dried thyme)
  • 2 tsp ground cumin
  • 3 tbsp soy sauce
  • ½ fresh hot chili
  • 1 tbsp tablespoon of mixed herbs (whatever you like)
  • 1 red or green bell pepper
  • 225 gr kidney beans from a can/bottle (drained and washed)
  • fresh cilantro
  • salt
  • corn to taste

Preparation

  • Heat the oil in a large pan. Fry the onion gently over low heat within 5 minutes
  • Add the tomatoes and garlic and sauté for about 10 minutes. Then add the wine and vegetable stock. Wait for it to boil.
  • Add the lentils, thyme, cumin, soy sauce, chili pepper and mixed spices. Simmer gently for about 40 minutes (or until the lentils are done) with a lid on the pan. Add some water if necessary.
  • After the lentils are done, add the kidney beans and bell bell pepper and cook for about 10 more minutes. Add a little more broth or water if it gets too dry.
  • Add some salt if needed and serve with rice, corn and some fresh salad (lettuce, tomatoes, onions, cucumber for example)

  • 2 cloves of garlic
  • 300 ml white wine
  • 300 ml vegetable broth
  • 115 g red or yellow split lentils
  • 2 fresh thyme leaves or 1 teaspoon dried thyme
  • 2 tsp grounded cumin
  • 3 tbsp soja sauce
  • ½ fresh hot chilipepper
  • 1 tbsp mixed herbs whatever you like
  • 1 red or green bell pepper
  • 225 g kidney beans from a can/bottle leaked and washed
  • fresh coriander
  • salt
  • corn

Preparation

  • Heat the oil in a big pan. Fry the onion until soft on a low fire within 5 minutes
  • Add the tomatoes and garlic and bake them around 10 minutes. Then add the wine and broth. Wait until it boils.
  • Add the lentils, thyme, cumin, sojasaus, chilipepper and the mixed herbs. Let it boil softly for around 40 minutes (or until the lentils are ready ) with a lid on the pan. If needed, add some water.
  • After the lentils are ready, add the kidney beans and let it cook for about 10 more minutes. Add some more broth or water when it gets too dry. If needed add some salt and serve with rice, corn and some fresh salad (lettuce, tomatoes, onions, cucumber for example).
