Indonesian Rendang with jackfruit

Rendang is normally with meat, but did you know that it also goes very well with jackfuit! Yes really. Jackfruit is slowly gaining ground as a meat substitute, and not without success. Because of its meaty texture, you can incorporate jackfruit through a variety of dishes. This fruit with lots of spines is native to Asia and but also grows in South America and Africa. And is used in cooking in many Asian countries. Jackfruit is related to the mulberry and grows on a tree that can reach 30 meters! Did you know that jackfruit (or Nangka) can weigh as much as 40 kilo?

Jackfruit in the Netherlands

In the Netherlands, you buy jackfruit in the Toko and usually canned. But recently also available from Fairtrade Original at Albert Heijn! Fresh, this fruit is not very common. If you buy canned, make sure you buy the jackfruit in brine (on salt water) and not the sweet “in syrup” variety.

Rendang

Jackfruit can also be used very well for curries and, for example, for a sandwich with vegan pulled pork. Go experiment with it! I went with it for this rendang. As a freelancer, I regularly visit fun and inspiring organizations. So as well Fairtrade Original. As a traveler and vegan, this is obviously a fantastic client! Hence, I really enjoy trying all plant-based products! This rendang is just on the market and super easy to make. All you need is time. Rendang is a stew, so allow for about 45 to 60 minutes of simmering.

Indonesian Rendang with Jackfruit

Make the tastiest Indonesian rendang not with meat but with jackfruit

Ingredients

  • 2 tin Jackfruit from Fairtrade Original
  • 1 onion
  • 2 cloves garlic
  • 1 pack Rendang from Fairtrade Original
  • 270 ml coconut milk
  • 200 ml water
  • 1 tbsp groundnut oil

Preparation

  • How do you make redang with jackfruit?
    Remove the jackfruit from the can, place in a strainer or colander and rinse under the tap. Then, if desired, remove the hard pieces. Personally, I don’t find the hard pieces distracting, especially when you simmer the rendang for over 50 minutes. Cut the jackfruit into about 3 to 4-inch pieces.

  • Chop the onion and finely chop the garlic. Get the skillet, put it on medium-high heat and put the oil in the pan. Let warm for a moment and then add the onion and garlic to the pan. Fruit together for a moment and then add the jack fruit.

  • Let fry for a minute, then mix in Fairtrade Original’s rendang boemboe. Pour in the coconut milk and water and mix well. Turn the heat low and put the lid on the pan. Simmer the contents for 50 minutes. Stir occasionally.

  • You can add more liquid if necessary, but you don’t have to. What you like yourself.
  • This rendang tastes great with sajoer beans and brown rice.
